We are proud to announce that our pure Vermont maple syrup and sugar products were used as the secret ingredients in a recently aired "Iron Chef America." The maple syrup battle was between Chef Brad Farmerie and Iron Chef Cat Cora.
In each program a challenging chef battles one of the residing Iron Chefs. This one hour cooking show is based around a secret ingredient which has to be incorporated into each presentation.
Judges were actress Cady Huffman, inventor Philip Preston, and fashion designer Nicole Miller. Mark Simmons from season four of "Top Chef" was a sous chef for Chef Farmerie. Alton Brown hosted the competition.
Chef Farmerie prepared five dishes: maple and soy-glazed eel, roasted scallop with pork and maple caramel, chicken liver créme caramel, smoked venison with maple, and maple pecan cake with maple gelee.
Iron Chef Cora prepared six dishes: maple-glazed French toast, maple-chile popcorn with a rum drink, maple gravlax (caviar with maple), maple-glazed veal sweetbreads, maple-glazed squab breast, and maple-poached Asian pear tart.
The judges sampled each of the dishes and it was clearly a win for Chef Farmerie. Chef Farmerie's scores were higher in all categories: Taste: 25 to 21 • Plating: 14 to 12 • Originality: 13 to 12
